Mince the Garlic, Pass the Certs

Liz’s Cheese and Garlic Roll, July 2002.

12 ounces cream cheese, softened
12 ounces sharp cheddar cheese, grated
4 to 6 cloves garlic, peeled and minced finely
1 cup walnuts, chopped finely
Garnishes: Paprika or cayenne pepper, parsley, tomatoes

Warm the cheeses to room temperature. Combine cheeses and garlic in a medium-sized bowl and mix together well. Spoon the mixture onto a sheet of aluminum foil or waxed paper and roll into a log. Spread nuts on the foil or paper and roll the log in them to coat it thoroughly. Remove to a plate, cover, and refrigerate for at least 30 minutes. Serve with a sprinkling of paprika or cayenne, and garnish with parsley, tomato roses, or sun-dried tomatoes. Serve with crackers, and pass the breath mints!!
