Easy-to-Make Caviar

If you catch a fish with roe, try this simple cruisers' caviar (recipe from "Carefree Caviar," People & Food, January 2005).

1/2 cup fresh fish roe
2 garlic cloves, minced
2 teaspoons lime juice
2 teaspoons olive oil
Salt and pepper, to taste
Cream cheese
Sun-dried tomatoes in oil, sliced
Black or green olives, sliced
1 bunch fresh dill

Place roe sac(s) in a pan of boiling, salted water. Simmer for 5
minutes. Drain. Combine cooked roe with next four ingredients. Seerve
spread on bread or crackers with chream cheese and slices of sun-dried
tomatoes and olives. Garnish with fresh dill, if available
