Filet same removing all bloodline flesh
Rub both sides of servings with good quality olive oil
Dredge in oregano
Blacken in 1/4" smoking hot olive oil, don't even think about overcooking
rice, couscous, potatoes or pasta are all possibilities,
but copious amounts of chardonnay are mandatory,
