Spicy Sausage-and-Cheese Appetizers

This tasty finger food is perfect for pot lucks and boat bashes (recipe from "A Towel and a Smile," People & Food, September 2004).

1 pound hot Italian sausage, diced finely
1/2 cup mozzarella cheese, shredded
1/2 cup mild cheddar cheese, shredded
1 4-ounce can black olives, chopped
1/3 cup sun-dried tomatoes, chopped
1/2 cup green olives with pimento, chopped
3 cups Bisquick
1 to 2 eggs, beaten
Salt and pepper, to taste
Cayenne pepper, to taste
1 bunch parsley

Combine ingredients. Roll into balls about the size of walnuts. Bake on a lightly greased cookie sheet at 400 degrees F until browned on both sides. Serve hot. Garnish with parsley.
