Drying Toasted Coconut

DRYING TOASTED COCONUT

Remove white meat from coconut shell and grate coarsely. Place grated coconut in roasting pan and bake at 200 degrees F for 2 hours, tossing frequently, until coconut is golden brown and dry. Cool, then store in an airtight container up to several months. Excellent with curry.
