Maori Bread

Maori Bread

1 1/4 cups all-purpose flour
1 cup sugar
2 tsp. baking soda
1/2 tsp. salt
3/4 tsp. allspice
Nutmeg, to taste
Cinnamon, to taste
1 cup boiled cassava, mashed
(substitute 1 cup canned pumpkin)
2 eggs, beaten
1/3 cup vegetable oil
Optional:
1/4 cup ripe banana, mashed
1/2 cup chopped nuts
1/2 cup shredded coconut

Combine and mix thoroughly the flour, sugar, baking soda, salt, allspice, nutmeg, and cinnamon. In a large mixing bowl, blend the cassava (or pumpkin), eggs, oil, and optional ingredients. Mix well. Fold in optional nuts and coconut.
Spread batter in one well-greased 8-by 5-inch loaf pan. Bake at 350 degrees for 1 hour. Cool in pan for 10 minutes, remove, and cool further on wire racks.
