Perfect Peanut Butter Bars

These bars are perfect for just about anytime you need some fuel. "People and Food" from December 2009

Aboard our Kendall 32, Gitane, these were a perfect, homemade substitute for granola bars – a great one-handed breakfast at the helm or quick midnight snack between sail changes. These are healthy and packed with protein and whole grain. They’ll be quickly devoured either in calm seas or rough weather!

1 16-ounce jar peanut butter (preferably unsweetened)
1 cup honey or maple syrup
2 cups oats
¾ (three-fourths) cup shredded coconut (preferably unsweetened)
½ (one-half) cup sunflower seeds
½ (one-half) cup walnuts and/or almonds, slivered
1 cup raisins

Mix all ingredients in a large bowl and press into a baking dish or plastic container. Mixture should be in between sticky and crumbly. If too gooey, add more oats; if too dry, add more honey/syrup. Refrigerate until firm. Cut into 16 to 20 bars and store in a covered container.
