Peace and Pomegranates

Pomegranate Brandy

A clean, 1-pint glass bottle with cork
2 pomegranates
1 cup (plus or minus) sugar
1/8 cup grenadine syrup*
1 1/2 cups brandy

Slice pomegranates in half (note: wear a dispensable T-shirt or apron – the juice spatters, and it’ll stain), then slice carefully along the inner membranes. Invert pomegranate halves over an empty bowl and squeeze out seeds; remove any remaining with a knife. Clean the seeds of any cloying skin. Drop seeds into the bottle. Add grenadine and sugar to almost fill the bottle. Cork the bottle and set it outside, in full sun if possible, for two to three weeks. When seed flesh softens and has created juice (mixture will reduce as it ages), add brandy to fill bottle. Shake well, strain, and enjoy.
