Quick Chicken

This is an online extra for Viva’s a Vixen, which appeared in the September 2002 issue.

This recipe comes from my friend Bill Siefert, with whom I am the co-author of the recently published book, “Offshore Sailing: 200 Essential Passagemaking Tips.”

2 to 4 chicken breasts
Olive oil, about 1/2 cup
1 cup seasoned bread crumbs
1/4 cup grated Parmesan or Romano cheese*
1 teaspoon garlic powder*
*or more to taste

Pour oil into a shallow bowl and dip each breast in it. Mix bread crumbs, cheese, and garlic powder. Dredge chicken breasts in the mixture. Form each breast into a mound with the ends tucked under (this helps keep the meat moist). Place on a baking sheet and bake at 350 degrees for about 30 minutes. Don’t overcook, or the meat will become dry.
